This operation offers a choice of venues – both in the historic old town of Edinburgh. They offer dining and entertainment – and their offering seems to be good taste rather than tourist tacky. I do think you will find the venues interesting – a must see.

Again in the old town – just near the Castle. They seem to offer a range of packages for groups. You don’t need to like whisky to enjoy going to the Scotch Whisky Experience – it is just interesting to find out about Scotland’s national drink.

This organization will manage the whole event for you within a Scottish theme – I suspect that they can do really tacky, to quite up-market. You will have to be specific in your brief.

This is a ferry which goes from South Queensferry – just North of Edinburgh, to a small island Inchcolm in the Firth of Forth. They do private charters, and include dining and entertainment. It will still be light enough in the evening to enjoy the experience. It is not smart or sophisticated – you can tell from the website, but it could be fun.

Prestonfield is a smart hotel very near the campus where you are holding the conference – so not too far to travel. I see from the internet that they hold taste of Scotland evenings and although I would recommend the hotel, I have a suspicion that they hold this type of event in their event venue – which is OK, but not like being in the main hotel. But I thought I would include it.
